Description: Tartaric acid is used to increase the acidity (thus lowering the pH) of a must or wine.

Add tartaric acid crystals at a rate of 1 gram / liter of wine to reduce the pH by 0.1 unit. Dissolve the crystals in a small volume of juice, and then add solution to the must before the start of fermentation.
